Step-by-Step Instructions

  1. Combine Milk and Sugar: Pour the whole milk into the saucepan and add the granulated sugar. Stir well to combine.
  2. Heat the Mixture: Place the saucepan on medium heat. Stir continuously to dissolve the sugar and prevent the milk from burning at the bottom.
  3. Simmer: Once the mixture starts to steam, reduce the heat to low. Allow it to simmer gently, stirring occasionally, for about 1.5 to 2 hours. The goal is to reduce the liquid by roughly half.
  4. Add Baking Soda:About halfway through the simmering process, add a pinch of baking soda. This will help prevent the milk from curdling and give it a smoother texture.
  5. Check Consistency: After the mixture has reduced by half, it should be thicker and have a slightly caramelized colour.
  6. Strain and Cool:Pour the milk through a sieve or cheesecloth into a clean container to remove any solid bits. Let it cool to room temperature.
  7. Store: Transfer the cooled condensed milk to an airtight container and store it in the refrigerator. It should keep well for up to two weeks.
